Enchiladas of my dreams...

These are filled with black beans, chorizo, corn, creme fraiche and cheese. I made the sauce and I don't want to brag or anything but it's AMAZING. On top we had beauty heart radishes and cotija cheese. I can die happy now.

*Edited- Please note that I wrote this after the Italian feast last night after drinking a lot of wine and Grappa! Note to self: Don't drink and blog!

ooohh, yeah, I want to do the no-knead too. B's the bread maker, but this is pretty tempting to someone who usually sticks to cooking over baking!!

Tanna- Yes, I sit firmly in the eat to live camp!

Lisa- We had a friend over for lunch and then Sam took the leftovers for lunch today. That means I get the leftover steak from the Italian dinner.

Ali- Hey, I never said that! Sure it's nice if they are pretty but taste is always most important. I'm glad you're enjoting my regularity. It's harder than I thought it would be.
